Pierce potato thoroughly with knife/fork. Microwave on full power for 10-15 mins.

Meanwhile, preheat your regular oven to 350F/Gas Mark 4/180C.

Remove potato from microwave. Carefully rub the olive oil into the skin (use a food brush as it will be very hot).

Sprinkle salt to lightly cover the potato and place in the pre-heated oven.

Remove potato when skin crisps. Place on a chopping board and cover with a clean towel. Firmly and quickly bash the potato with your fist (on the towel, to avoid burning).

If you do this right, it should fluff up the center. Then you just slice the potato open and add filling of your choice.

Soak kidney beans overnight. Drain and boil for 15 minutes on a high heat.

Cook bolognese sauce according to recipe. Add kidney beans and chili powder to taste.

Add olive oil to a large pan.

Chop up onions. Add onions and ground beef to the pan.

Cook on medium heat, all the while using a wooden spoon to stir and break up the ground beef, until it turns from red to brown.

Chop up garlic. Add tomato puree, chopped tomatoes, garlic, oregano and basil to the pan. Stir, Reduce heat to low and cover with lid.

Let it simmer gently for at least 45 minutes, up to about 3 hours. Stir often to prevent burning. The longer it's left simmering, the better it will taste. If the sauce becomes too thick, add some water.

Add salt and pepper to taste.
